Tzatziki

Bright and fresh, this goes with our campfire dinner of Grilled Halloumi and Vegetable Kabobs or as a dip.


Serves 4

Ingredients

  • 1/2 English Cucumber, grated and squeezed to remove water

  • 1 Pint Plain Greek Yogurt

  • 1 Clove Garlic, minced

  • 2 Tablespoons Fresh Mint, finely chopped

  • 1/4 Cup Fresh Dill, finely chopped

  • 1 Tablespoon Lemon Juice

  • 1 Tablespoon Olive Oil

  • Salt, to taste


Preparation

  1. Grate the cucumber with a box grater. Drain the grated cucumber through a fine mesh sieve or strainer. Press the cucumber in the sieve to remove as much liquid as you can.

  2. Mix all ingredients and enjoy.

Enjoy with our Grilled Halloumi and Vegetable Kabobs.
