Grilled Halloumi and Veggie Kabobs

Halloumi is the perfect cheese for grilling. Its high melting point allows the edges to crust while the center gets soft and melty. After several failed attempts with skewers of cheese falling into the fire, I found the perfect tool, Kabob Grilling Baskets = Save the Cheese!


Serves 2

Ingredients

  • 2 7oz packs of Halloumi, cut into 1-inch pieces

  • 1 Zucchini, cut into 1-inch pieces

  • 1 Red Bell Pepper, cut into 1-inch pieces

  • Handful of Cherry Tomatoes

  • 1 Red Onion, cut into 1-inch pieces

  • Avocado Spray Oil 

  • 1 Lemon, cut in half 

  • 2 Pitas

  • Za’atar Paste


Preparation

  1. In the fire pit, get a good bed of coals going.

  2. Grill the lemon, cut side down until soft and caramelized.

  3. Prep the cheese and veggies.

  4. Spray the Kabob Grilling Baskets with Avocado Oil

  5. Fill the baskets with cheese and vegetables and spray with oil. 

  6. Grill baskets over coals until the cheese is golden and the vegetables are cooked, about 3 minutes per side.

  7. Brush the pitas with Za’atar Paste and grill until warm, about 2 minutes per side. 

Serve immediately with a squeeze of hot lemon juice, grilled pitas, and Tzatziki.
